2022 China Catering Industry Annual Report: China's prepared dishes industry may usher in a "standard tide"

Xinhua News Agency, Beijing, Oct. 1 (Xinhua) -- China Hotel Association recently released the "2022 China Catering Industry Annual Report" shows that the prepared dishes, as an emerging industry, there is a lack of standards. In the context of advocating standardized development of all industries, the prepared dishes industry may usher in a wave of standards.

Chen Xinhua, president of the China Hotel Association, said the report is based on big data, statistical data and research data, and made a survey and analysis of the situation and dynamics of the development of the catering industry in 31 provinces, autonomous regions and municipalities across the country in 2021, as well as a detailed interpretation of the development trend of the catering industry and the country's new policy, and gave relevant development suggestions.

In recent years, China's consumption demand for prepared dishes is strong, and the industry outlook is very broad. The report estimates, based on industry data, that there will be a 700 billion yuan market for prepared dishes in the next 10 years, with a penetration rate of 15% to 20%.

The report points out that, due to the lack of a clear and unified definition of the prepared food industry, the absence of corresponding regulatory and production standards, the quality of prepared food products is uneven. In addition, the variety of products and complexity of materials of prepared vegetables also pose challenges to the supply chain coordination ability of enterprises. In this regard, Chen Xinhua said that the construction of national standards should be accelerated in order to realize the development of high quality branding in the prepared vegetable industry.

The report also shows that in the entire catering industry, cooking process, service process, dish production, kitchen utensils and new occupations, new business and other fine items also need to strengthen the development of standards, improve the relevant standards has become the industry's inherent requirements.

Since its release in 2009, the annual report of China's catering industry has played an important role in fostering brands, setting up benchmarks and listing services for the industry. The report*** involves more than 50,000 stores and more than 800 brands; it covers a wide range of business formats such as regular meals, hot pots, group meals, fast food, Japanese food, Western food, tea and drinks, and so on.
